The Wine Cellar
In the Casa Vieja (old house), the cellar is the place where the wine is made and stored. They begin all the work each year during the months of February and March as: "The work is hard in this time of the year but it is the best time to harvest the grapes which are then selected for the manufacture of wine."
The Process used for Producing the Wine
There are several factors that determine the type of wine which are made. For example, the wine "Oporto" should be 24 degrees of sugar. When the grapes are selected they are trodden and after this the processing begin. The juice is extracted and transferred to oak barrels and this ones must be well sealed for fermentation which happens after six months to a year. After this the wine is ready.
